Almond Butter Banana Oat Bars


There are some days where breakfast just doesn’t keep you satisfied until lunch and these almond butter banana oat bars make a great snack to tide you over until lunch or dinner time. Skip the doughnuts and candy bars and tame the munchies with a nutritious, home-baked snack bar instead.  

Almond Butter Banana Oat Bars

These almond butter banana oat bars are perfect for sharing since they accommodate a bunch of different dietary restrictions. They’re vegan, gluten-free (if your oats are gluten-free), dairy-free, and peanut-free.

  • 8”x8” baking dish
  • Parchment paper
  • Food Processor


  • 2 bananas, ripe
  • ½ cup almond butter
  • ½ cup maple syrup
  • 3 tbsp coconut oil, melted
  • ½ tsp vanilla extract
  • 2 cups rolled oats
  • ½ cup dark chocolate chips
  • ¼ cup almonds, chopped
  • ¼ tsp sea salt


  • Preheat oven to 350 degrees. Line a baking dish with parchment paper.
  • Place bananas, almond butter, maple syrup, coconut oil, and vanilla in a food processor and process until smooth.
  • Add in oats, chocolate chips, almonds, and salt and pulse until combined.
  • Spread mixture evenly into baking dish. Bake until set, about 20-25 minutes.
  • Allow to cool then slice into 9 squares.
